Mexican Skillet Lasagna

Mexican Skillet Lasagna is a zesty and satisfying fusion of Italian and Mexican cuisines. This dish has hatch chile cheese sausage, beans, tortilla chips, and plenty of cheese, creating a comforting and flavorful one-pan meal with a south-of-the-border twist.

Ingredients:
  • 1 lb. Polidori Hatch Chili Sausage
  • 1 15 oz. can Tomatoes
  • 1 4 oz. can Green chiles
  • 1 15 oz. can Black beans
  • 1/2 tsp. Chile powder
  • 1/4 tsp. Dried oregano
  • 1/2 tsp. Cumin
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 2 tbsp. Sour cream
  • 1 15 oz. can Enchilada sauce
  • 5 whole Corn tortillas
  • 1 1/2 cups Shredded cheese

Garnish Options

  • jalapeño, fresh tomatoes, green onions, cilantro, sour cream
Directions:
  • Remove the sausage from the casing.  Run a knife along the center of the sausage lengthwise and remove the sausage, discarding the casing.
  • Heat a cast-iron skillet over medium-high heat and add the sausage, breaking into crumbles as you stir.  Heat until fully cooked through.
  • Add black beans, green chiles, canned tomatoes, 1/4 cup of the enchilada sauce and stir to combine.  Cook for 5 minutes until heated through and flavors become incorporated.
  • Dollop sour cream over the skillet and gently swirl into the meat and bean mixture.
  • Meanwhile, stack 5 corn tortillas and cut them into thirds.
  • Layer the tortillas over the mixture, then evenly cover with the enchilada sauce.  Top with grated cheese.
  • Place the skillet into the oven under the broiler for about 4-5 minutes until the cheese is melted.
  • Top with your choice of garnishes and enjoy.

Ingredients:
  • 1 lb. Polidori Hot Italian Sausage removed from casing
  • 1 lb. Ground elk can sub beef or turkey
  • 1 cloves Garlic minced
  • 1/2 small Yellow onion
  • 2 whole Bell peppers halved and seeded
  • Mozzarella cheese
  • Green onions
Directions:
  • Preheat oven at 425°
  • Put halved peppers, facing down on cast iron into the oven to cook until tender, but not fully cooked through
  • Sweat onions & garlic in cast iron pan over medium heat until cooked through
  • Add Polidori Hot Italian Sausage (meat removed from casing) & ground elk to the cast iron pan. Add salt & pepper. Cook until meat has been cooked through
  • Remove partially cooked peppers & turn right side up. Spoon Polidori Sausage meat mixture into peppers. Top with mozzarella cheese & cook in the oven 5-10 minutes until pepper is fully cooked through & cheese is melted.
  • Top with green onions & serve with side of brown rice or quinoa

Ingredients:
  • 24 oz. Ricotta cheese
  • 3/4 lb. Polidori Italian Sausage crumbled and cooked
  • 12 oz. Jumbo pasta shells Tony's Market has the best ones
  • 1/2 oz. Fresh parsley chopped
  • 3 cups Whole milk shredded Mozzarella cheese half in mixture, half on top
  • 1/2 cup Parmesan cheese grated
  • 2 whole eggs
  • 52 oz. Marinara sauce (2 26oz. jars)
Directions:
  • Boil the shells until theyare about 2/3 of the way done
  • Preheat oven to 350º
  • Mix Ricotta, Mozzarella, Parmesan, eggs, parsley, and cooked sausage in a bowl
  • Strain the shells
  • Pull out your favorite casserole dish and add some marinara sauce in the bottom
  • Take a pastry bag and fill with the cheese and sausage mixture and arrange them in the pan with the open part of the shells facing up
  • Pour marinara over the top of the shells
  • Sprinkle the rest of the Mozzarella on top
  • Bake for about an hour
  • Ring the dinner (or lunch) bell and ENJOY with your family and friends. Pair with garlic bread and a salad for a fulfilling meal!
