Chicken & Apple Sausage Breakfast Burrito

A Chicken & Apple breakfast burrito is a flavorful wrap filled with tender chicken, crisp apples, potatoes, cheese, onions, peppers, and scrambled eggs. This savory and slightly sweet burrito offers a satisfying start to the day.

Ingredients:
  • 2 lb Polidori Chicken & Apple Sausage
  • 1 cup potatoes diced
  • ½ cup onions diced
  • ½ cup red pepper diced
  • 3 eggs
  • salt and pepper to taste
  • tortillas of your choice
  • 1 cup shredded cheese
Directions:
  • You can start by cooking your ground Chicken and Apple Sausage. The potatoes should be in roughly 1/2" cubes, frozen or fresh!
  • Coat a large, nonstick skillet with cooking spray. Over medium heat, cook sausage, potatoes, onion, and red pepper until onion is beginning to soften, and the sausage and squash are beginning to brown a little (about 7-8 minutes), stirring occasionally.
  • Add eggs to the skillet and sprinkle with salt and black pepper. Continue cooking, stirring to scramble the eggs, until eggs are done.
  • Lay one tortilla on a work surface, and sprinkle 1/4 cup of cheese down the center, leaving a large border all around the cheese. Spread 1/4 of the sausage mixture (about a heaping 3/4 cup) on the cheese.
  • Fold the short ends of the flatbread inward toward the middle and then fold the long sides inward toward the middle, making a tightly closed burrito. Repeat with the remaining three tortillas, dividing the remaining cheese and sausage mixture evenly among them.
  • Preheat a dry, nonstick skillet over medium heat. (We simply wash out the same skillet we used for cooking the sausage mixture). Once the skillet is preheated, add the burritos and cook on the first side until golden brown, about 1 1/2 – 2 minutes. Flip burritos and cook on the second side until golden, about another 1 1/2 minutes. Serve immediately or place in the freezer!

Ingredients:
  • 1 lbs Polidori Chorizo
  • 1 package of bacon
  • 3-4 eggs
  • 1 loaf of King Hawaiian Rolls
  • Swiss Cheese
  • Sharp Cheddar
  • Maple Syrup
  • Hot Sauce
Directions:
  • First, ground your chorizo and cook your bacon according to your preference; I prefer baking them in the oven. Whisk your eggs and cook them in a pan with butter until scrambled.
    Cut the King Hawaiian Rolls in half to create top and bottom halves. Then, begin the layering process: Swiss cheese, followed by chorizo, eggs, bacon, and sharp cheddar cheese. Place the top half on top and brush with butter and everything bagel seasoning.
    Bake in the oven at 350 ℉ for about 15 minutes.
    For the dipping sauce, mix equal parts maple syrup and hot sauce together.
    That's it! Cut and serve!

  • 1 lb Polidori Chorizo
  • 1 package flour tortillas
  • 1 jar caramelized onion jam
  • 1 carton of eggs
  • 1 package of bacon
  • Sharp shredded cheddar cheese
Directions:
  • Spread your chorizo evenly along a flour tortilla and place face down on a skillet on high heat.
  • Candied bacon: coat bacon pieces in a mixture of butter and sriracha and sprinkle with brown sugar. Cook in oven at 400f until browned- roughly 8 mins
  • Top with caramelized onion jam, sharp cheddar cheese, bacon, and an over-easy egg. Serve!
