The Polidori Breakfast Sausage Patty Melt is a savory breakfast delight that combines Polidori breakfast sausage with melted cheese and sautéed onions, all sandwiched between slices of grilled bread. This flavorful and hearty breakfast sandwich is sure to satisfy your morning cravings with its perfect blend of textures and tastes.

Ingredients:
  • 4 tbsp Butter
  • 1/2 whole Medium yellow onion sliced
  • 1/4 lb. Polidori Ground Breakfast Sausage
  • 2 whole Eggs beaten
  • 3 slices Cheddar, Swiss, Provolone, or other cheese
  • 2 slices Bread (sourdough, rye, whole wheat, etc.)
Directions:
  • Heat a non-stick skillet over low heat and melt 2 tablespoons of the butter. Add the onions and cook, stirring occasionally, for 15 to 20 minutes, until onions are soft and slightly caramelized. Remove them to a plate and set them aside.
  • Form the sausage into a thin patty about the width of the bread you're using. Add it to the same skillet and increase the heat to medium. Cook the patty on both sides until fully cooked through, about 5 minutes. Remove to a plate and set aside. Wipe the skillet clean with a paper towel.
  • Pour in the beaten eggs and cook, forming them into a rough circle as they set up. Flip to finish cooking on the other side.
  • Assemble the patty melt: bread, cheese, patty, eggs, cheese, onions, cheese, bread. Melt the remaining butter in a clean skillet over low heat. Place the sandwich in the skillet and cook low and slow for a good 8 to 10 minutes, until the cheese is melted and the bread is deliciously crisp. Add more butter to the skillet if the bread needs it (you don't want the bread to be dry!)
  • Slice in half and enjoy!

Ingredients:
  • 1 lb. Polidori Hatch Breakfast Sausage
  • 5 Eggs
  • 4 Everything bagels
  • 4 oz. Spreadable cream cheese
  • 4 strips Thick cut bacon
  • 4 Lettuce cups
  • 1 Avocado sliced
Directions:
  • Cook bacon in the oven at 380 degrees for 15 minutes (or until desired crispiness)
  • Crack 1 egg yolk into breakfast sausage, mix, and form four patties
  • Refrigerate patties for 20 minutes
  • Prep the rest of the ingredients (slice avocado, cut bagels and toast them)
  • Fry eggs to desired yolk consistency (hard, soft, or medium center)
  • Cook up patties in pan to an internal temperature of 160 degrees
  • Melt the cheddar cheese onto the patty
  • Assemble: spread cream cheese on bottom half of bagel, then layer lettuce, Hatch Breakfast Sausage patty with melted cheese, bacon, avocado, and fried egg, top with other half of bagel and ENJOY!

Polidori Loco Moco is a delicious and hearty Hawaiian dish that features a bed of steamed rice topped with a succulent Polidori sausage patty, a fried egg, and rich brown gravy. This fusion of flavors creates a satisfying and comforting meal that's a favorite comfort food in Hawaii.

Ingredients:
  • 1 lb. Polidori ground Chorizo Sausage Formed into three patties
  • 1 cup Baby Bella Mushrooms Sliced
  • 1/2 Sweet yellow onion Peeled and julienned thin
  • 2 tbsp Olive oil/Canola oil blend
  • 1 cup Prepared brown gravy
  • 3 cups Jasmine rice Cooked
  • 6 Large eggs
  • 1 tsp 5280 Culinary Tiki Tiki Seasoning
Directions:
  • Clean and sanitize all cutting boards and prep surfaces prior to use. Read all manufacturer’s instructions before using grills or any cooking tools.
  • Clean Weber Grill Grates and ignite Weber, adjust temp to 450˚- 500˚. Add Cast Iron skillet to grill while heating up.
  • While grill is heating up – prep as follows:
    Mushrooms – sliced thick
    Onion – peeled and julienned thin
    Rice – Cooked and held hot
  • Add Oil to the pre-heated skillet.
  • Add the onions and mushrooms to the skillet and sauté for about 6-7 minutes or until they start to turn golden in color.
  • Add the chorizo patties to the grill.
  • Grill on the first side for 5-6 minutes, turn patties over and grill the second side for 5-6 minutes or until 165˚ internal temperature is reached.
  • While the patties are cooking on the second side, add the gravy to the onions and mushrooms and stir to combine.
  • Carefully remove the skillet of gravy and the patties and bring into the kitchen.
  • Cook eggs two at a time over easy and lightly season with Tiki Tiki.
  • Plate the Loco Moco as Follows:
    1. Bowl
    2. Rice
    3. Chorizo Patty
    4. Gravy with Mushrooms and Onions
    5. Over Easy Eggs
    6. Garnish with green onions or parsley if desired
     Devour!
