Rotel Sausage Queso
This Rotel Sausage Queso is a creamy, flavorful dip made with melted cheese, spicy Rotel tomatoes, and savory Polidori Chorizo. It's a crowd-pleasing appetizer, perfect for game days or gatherings! This dish is served with tortilla chips; we used a hint of lime chips to add great flavor!

Ingredients:
- 1 lb block processed cheese, such as Velveeta
- 1 10 oz can diced tomatoes and green chiles, such as Ro*Tel Original
- 1 lb Polidori Chorizo Sausage
Directions:
- In a large skillet, warm to medium-high. Add the Chorizo and cook, crumbling the meat with a wooden spoon until browned and cooked for 4 to 6 minutes.
- Decrease the heat to medium and add the cheese, tomatoes, and chiles with their juices. Cook, breaking up the block of cheese with a spoon, until the dip is smooth and creamy, 3 to 5 minutes.
- Serve hot and with tortilla chips for dipping. We used hint of lime chips to add a little tang!
