Ingredients:
  • 1 lbs Polidori Sausage Bratwurst Links or Beer Bratwurst
  • 1 sheet of puff pastry
  • 1 egg, beaten (egg wash)
  • Ed McCaffrey’s Rocky Mountain Mustard, for serving
Directions:
  • Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.
    Cook the brats: Grill or pan-sear until cooked through and perfectly browned, about 10–12 minutes. Let cool slightly, then cut into halves or thirds.
    Prepare the puff pastry: Roll out the pastry on a lightly floured surface and cut into 2-inch strips.
    Wrap the brats: Place a brat piece on one end of a strip and roll it up snugly. Seal the edge with egg wash.
    Brush and bake: Arrange the seam-side down on the baking sheet, brush with egg wash, and bake for 15–18 minutes, or until golden brown and puffed.
    Slice and serve: Once slightly cooled, cut into bite-sized pieces and serve warm, accompanied by plenty of Rocky Mountain Mustard for dipping.

Ingredients:
  • 1 lbs Mild Italian Polidori Sausage
  • 1 jar Marinara Sauce
  • 1 bag Mozzarella Cheese
  • 1 bag Crinkle Fries frozen
  • Pepperoni, Pineapple, Pickled Jalapenos ANY TOPPINGS YOU WANT!
Directions:
  • Preheat the oven to 450°F. Line one sheet pan with foil for the pizza toppings and lightly oil a second sheet pan for the fries.
  • Remove the casing from the Polidori Sausage and crumble it into a heated skillet over medium heat. Cook until browned and fully cooked, breaking it into small pieces as it cooks.
  • Prepare the Pizza Toppings. Once the sausage is cooked, spread marinara sauce evenly over the foil-lined sheet pan. Sprinkle with shredded cheese, cooked sausage, pepperoni, and any additional toppings you choose.
  • Place the fries in the oven and bake for 10 minutes. After 10 minutes, place the pizza toppings pan in the oven and bake everything for another 10 minutes until the cheese is melted and bubbly.
  • Remove both pans from the oven. Transfer the crispy fries to a serving dish, and spoon the hot, cheesy pizza toppings over them. Serve immediately for a delicious, crowd-pleasing dish.

Ingredients:
  • 1 bag Tostitos scoops tortilla chips
  • 1 (8 oz) package cream cheese softened
  • ½ cup sour cream
  • 1 lb Polidori Chorizo Sausage
  • 2 to 3 jalapenos seeded and diced
  • 1 tsp garlic powder
Directions:
  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  • Cook the Polidori Chorizo in a skillet until it is cooked and crumbled. Once cooked, set it aside to cool!
  • Mix cream cheese, sour cream, and egg. Add jalapenos, chorizo, and garlic powder and mix until well combined.
  • Arrange scoops cup side up on the prepared sheet and spoon-filling into each one (a cookie scoop works well for this). Sprinkle parmesan cheese over the top of each puff.
  • Bake for 10-12 minutes or until bubbling. Serve hot for the best results.
