Ingredients:
Marry Me Italian Sausage Soup
- 1 lb Polidori Mild Italian Ground Sausage
- 8 oz sun-dried tomatoes, chopped
- 1 medium onion, diced
- 1 small red bell pepper, diced
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper flakes
- 2 handfuls of spinach
- ½ cup heavy cream
- 32 oz chicken stock
- ½ cup fresh basil leaves, julienned
- 6 oz small pasta (Ditalini, Pastina, Orzo, Shells)
Directions:
- Heat 1 tablespoon of oil in a large stockpot over medium-high heat. Add Polidori Mild Italian Ground Sausage, diced onion, and diced bell pepper. Use a wooden spoon to break up the sausage as it cooks. Sauté mixture until sausage is browned.
- Add in garlic and sauté.
- Pour in chicken stock and add Italian seasoning and red pepper flakes; stir to combine.
- Drain sun-dried tomatoes from their oil, chop, and add to the soup.
- Add pasta of your choice and stir to combine. Continue to simmer soup until the pasta is nearly al dente. Lower heat if needed so the soup is simmering, rather than boiling.
- Keeping the heat on low, add cream, spinach, and basil. Stir gently until spinach is wilted.
- Serve immediately and garnish with preferred toppings like parmesan, cracked black pepper, more fresh basil, and/or toasted bread!
Adding salt to this recipe is not needed, since our Ground Mild Italian Sausage has salt!
