Ingredients:
1/2poundThick Applewood baconcut into 1/4" strips
3/4cupSweet yellow oniondiced small
1tspFresh garliccrushed
8linksPolidori Bratwurst
3cansPinto beansdrained and rinsed
3tbspCajun seasoning
1.5tbspCumin
1.5tbspDark chili powder
1tbspWorcestershire sauce
2tbspUnfiltered apple cider
1/2cupDark brown sugar
2cupsFire roasted tomatoescrushed
1cupBeef stock
Directions:
Heat your slow cooker to HIGH heat.
Add the Polidori Brats and brown on both sides.
Add the bacon and onions and saute until bacon is slightly browned and onions start to caramelize about 50% (Approx. 10-12 minutes).
Add the remaining ingredients to the Slow Cooker and mix well.
Cover and simmer for 1 hour, slowly remove cover and stir to mix.
Taste and adjust seasoning/sweetness as needed.
Replace the cover and let cook for 1 more hour or less depending on preference.
Remove from the slow cooker and enjoy! This is a great recipe to make over a campfire in your dutch oven. Happy Camping!!
