Is Polidori sausage high in fat?
Polidori sausage is the leanest Italian Sausage on the market made from premium pork shoulder with a lean to fat ratio of 78/22.
How long will an unopened package of Polidori Sausage last in my refrigerator?
Polidori sausage can be safely stored in a refrigerator for 3-5 days, or until the “sell by” date marked on the package. Polidori Sausage can be frozen for up to 4 months.
Is Polidori a local company?
Polidori Meats has been a local company since 1925. Run by 4th generation Polidori’s, they have been making Italian Sausage in Denver, longer than any other Colorado sausage company.
I have not seen Polidori at my local grocery store. What should I do?
If you do not see Polidori Sausage at your local grocery store, talk to the meat manager and ask them to order it. Customer’s demands have strong influences over what a store carries.
What is the best way to cook Polidori sausage?
There are several ways in which to cook Polidori sausage. A favorite and quick way is to pan fry, grill or broil for 15 – 20 minutes, turning frequently until cooked through and firm to the touch. If your pan starts to burn, try adding a little water and steaming the sausages to finish. Remember that fresh sausage needs to be cooked thoroughly. According to the USDA and the National Pork Board, pork should be cooked to an internal temperature of 160° F.

Are you a USDA Facility?
Polidori sausage is inspected by and regulated by the USDA on a daily basis. We have a full-time USDA inspector onsite daily. In addition, we adhere to a strict food safety program (HACCP) that includes best practices and we conduct third-party audits for our procedures on an annual basis.

Polidori sausage is made using lean cuts of pork shoulder combined with only enough fresh spices to add flavor.
What kind of casing do you use?
We only use natural hog casings and collagen casings for our sausage.
Does Polidori Sausage Have Dairy?
Polidori Hatch Green Chile Cheese has mozzarella cheese in them. Our precooked meatballs also contain eggs.
