Polidori Bagel Sandwich


Cooking for 2, 4, 6, 20 people?! Simply change the number of guests you are feeding and watch the ingredients below update to make the perfect amount of food. TIP: You might want to account for those who tend to go for seconds…or thirds.  Whatever, we don’t judge.

Polidori Bagel Sandwich

  • 1 lb. Polidori Hatch Breakfast Sausage
  • 5 Eggs
  • 4 Everything bagels
  • 4 oz. Spreadable cream cheese
  • 4 strips Thick cut bacon
  • 4 Lettuce cups
  • 1 Avocado sliced


  • Cook bacon in the oven at 380 degrees for 15 minutes (or until desired crispiness)
  • Crack 1 egg yolk into breakfast sausage, mix, and form four patties
  • Refrigerate patties for 20 minutes
  • Prep the rest of the ingredients (slice avocado, cut bagels and toast them)
  • Fry eggs to desired yolk consistency (hard, soft, or medium center)
  • Cook up patties in pan to an internal temperature of 160 degrees
  • Melt the cheddar cheese onto the patty
  • Assemble: spread cream cheese on bottom half of bagel, then layer lettuce, Hatch Breakfast Sausage patty with melted cheese, bacon, avocado, and fried egg, top with other half of bagel and ENJOY!
