Instructions
  1. In a skillet, brown Polidori Chorizo links in 1 tablespoon vegetable oil. Pierce to release juices while cooking. Slice into rounds and set aside.
  2. In a pot, heat 1 tablespoon vegetable oil and sauté chopped onions, garlic cloves, chopped carrots and chopped red pepper.
  3. Add 4 cups chicken stock + 1 cup water (to start), drained black beans, black olives, cumin, Southwest seasoning, chorizo slices. Simmer 30 minutes. Add more stock, if necessary.
