Hearty Polidori Minestrone Soup
  1. In a large skillet brown sausage, breaking into little pieces. In a large kettle, combine 4 quarts water, carrot, tomatoes, parsley, tomato paste, 1 tablespoon salt, oregano, basil, kidney beans, spinach, zucchini and sausage. Simmer, covered, until vegetables are tender, about 1 hour.
  2. To serve, add dried noodles to soup and heat for 15 – 20 minutes. Sprinkle each serving with Parmesan cheese.
